Tina:

If you open the RAW with the Canon software, it will apply the in 
camera settings.  All the third part raw software seems to ignore the 
camera settings when opening a raw.  For example, when you shoot a 
custom white balance and or have a custom tone curve in the Camera, 
the Canon RAW software will apply this, while ACR does not.

I have been shooting Canon professional bodies in RAW for many years 
now,  so I am talking from experience.
