Eric - I look for edges, too. If you are close enough, you can always 
focus on the eyebrows or eyelids.  Otherwise, you could try to find 
an edge on the same plane of focus as the eyes - a shirt front is 
usually close.  At 5.6 that should give you plenty depth of field to 
include the eyes.  Try it at 1.0 or 1.2!!  That's when you get into 
gnat's eyelash depth of field!  You can also rock back and forth 
yourself instead of changing the focus of the lens.  Practice, 
practice, practice!
