Color sensing cone cells fatigue if you stare at an object too long. 
They need time to regenerate. In this case the picture is formed by the 
complimentary colors of the actual scene. When the scene switches to 
B&W the cone cells responsive to the complimentary colors are fatigued 
but the cells sensitive to the real colors respond. So for a short time 
the B&W scene appears to be in its real colors. This is one of the best 
examples I have seen of this illusion.
